Ever prepared a cheese-stuffed burger? The most usual method to make one is to put a piece of cheese between two thin hamburger patties and pinch the sides. The bad part about this is that if you didn’t sealed very good the edges of the burger all the melted cheese leaks out when you cook it. You can also scald your tongue if you are not careful on the hot cheese. The blue cheese burgers aren’t as pretty as a stuffed cheese burger but you can get a great dose of blue cheese flavor with each single bite that you take.
Ingredients
  • 1 pound ground sirloin
  • 2 pounds ground chuck
  • 3 extra-large eggs
  • 8 ounces blue cheese, sliced (recommended: Danish Blue)
  • 1/4 cup steak sauce (recommended: Crosse and Blackwell)
  • 8 to 10 hamburger buns
  • 1/2 cup seasoned dry bread crumbs
  • 3/4 teaspoon freshly ground black pepper
  • 1 1/2 teaspoons kosher salt
Instructions
  1. Mix carefully the meats, steak sauce, bread crumbs, salt and pepper and the eggs with the tines of a fork, but be careful not to mash them. Form the hambureger patties lightly and then press it into shape.
  2. Prepare a stove-top grill or a charcoal one.
  3. After all these are prepared you will have to cook the blue cheese burgers for 4 minutes on one side and for 3 minutes on the other side. With the cooking done put the hamburgers on a plate and cover it with aluminum foil. Allow the burgers to get colder for five minutes. Meanwhile grill the buns, cut side down for approximately 1 minute until it becomes toasted. Place a hamburger and a slice a blue cheese in each bun and serve hot.
  4. Cook the hamburgers for 4 minutes on 1 side, then turn and cook 3 minutes on the other side for medium-rare. Remove to a plate and cover with aluminum foil. Allow the hamburgers to rest for 5 minutes. Meanwhile, grill the buns, cut side down, for 1 minute, until toasted. Place a hamburger and a slice of blue cheese in each bun, plus arugula and tomato, if desired, and serve hot.

 

TIP: go with extra lean hamburger meat for the blue cheese burger, given all the cheese, I don’t recommend it, unless you want blue cheese flavored dry burgers

 

TIP: For extra taste you can add arugula and tomatoes!

Ingredients
  • • 2 pounds Yukon golden potatoes, washed and quartered

Directions
  1. Place potatoes in a large stockpot and cover with cold water. Add salt and bring to a boil over high heat. Reduce to medium and cook until fork tender. Drain well. Add back to the pot that they were cooked in.
  2. Meanwhile, heat butter and cream until hot. Add the crumbled blue cheese and stir together. Add sauce to potatoes and mash until smooth. Season with salt and pepper.
  3. It takes about 35 minutes to make these delicious potatoes, 15 minutes for preparation and 20 for cooking. This recipe is easy to make and you can add a garnish or even other dried herbs, such as oregano, rosemary or parsley. You can make the potatoes eight hours ahead and reheat them just before serving.

 

TIP: A rich, delicious stove-top side dish with a silky texture. This pairs especially well with the Porcini-Rubbed Turkey with Shiitake-Madeira. Gravy, or grilled steaks.

TIP: For an even more delicious treat, you might want to add sour cream, Dijon mustard in order to make a nice, homogenous composition. You may want to toss in the bacon right before serving so that it doesn’t get mushy.

  1. Divide bread dough in half. Press each portion onto the bottom of a 12-in. pizza pan coated with nonstick cooking spray; build up edges slightly. Prick dough several times with a fork. Cover and let rise in a warm place for 30 minutes.
  2. Brush dough with oil. Combine the basil, oregano and garlic powder; sprinkle over dough. Bake at 425 degrees F for 10 minutes. Arrange onion and tomatoes over crust; sprinkle with cheeses. Bake 8-10 minutes longer or until golden brown.
